The Bees Knees, a new bee-themed bar at the Marquis de Lafayette, takes inspiration from a 1920s speakeasy, but it doesn’t make itself hard to find. A neon sign in the entrance proudly pronounces it as Cape May’s “worst” kept secret. The cocktail menu includes Prohibition-era nods such as Giggle Juice and this sweet spin on a Gin Sour crafted with local honey.
2oz Barr Hill Honey Gin
1/2 oz Honey Syrup
1/2 oz Fresh lemon juice
Coat the inside of a martini glass with raw local honey. In a shaker, combine gin, honey syrup, and fresh lemon juice. Shake well and pour into the martini glass. Enjoy!
Bartender’s Tip: Serve with the honey stick if possible!
