Chipotle Peach Barbecue Sauce

Ingredients
  • 3 peaches peeled and sliced
  • 1 onion chopped
  • 2 Tbsp. oil
  • ½ cup molasses
  • ¼ cup brown sugar
  • 2 cups ketchup
  • 2 Tbsp. cider vinegar
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. chipotle chili in adobo
  • 1 Tbsp. minced garlic
  • 1 Tbsp. minced fresh ginger
  • 1 tsp. dry mustard
  • 1 tsp. cinnamon
  • 1/4 cup bourbon (optional)
Instructions
  1. In a saucepan, heat oil.
  2. Sweat onions, garlic, and ginger.
  3. Add peaches and cook for 5 minutes.
  4. Deglaze with bourbon and vinegar.
  5. Add remaining ingredients and cook on low for 30 minutes.
  6. Purée with an immersion blender.
