Succotash 2024

Ingredients
  • 4 ear worth corn kernels (approx. 3 cups)
  • 4 strips bacon, diced
  • 1 onion, minced
  • 2 cups Lima beans
  • 1 tomato, diced
  • 2 tbsp minced garlic
  • 4 tbsp butter
  • 1 tsp chopped thyme
  • Salt and pepper
Instructions
  1. Cook bacon in a pan until slightly crispy.
  2. Add butter, onions, and garlic. Cook for 5 minutes.
  3. Add corn and lima beans. Season with salt, pepper, and thyme.
  4. Add tomatoes, cook until beans are tender, and enjoy.
