Three Sisters Salad

Jalapeño Green Goddess Dressing
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 seeded jalapeno peppers
  • 2 Tbsp. lime juice
  • 1/2 cup chopped parsley
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped chives
  • 1 small garlic clove
  • 1 tsp. anchovy paste or fish sauce
  • Salt and pepper to taste
  • Three Sisters Salad
  • 1/4 chopped cup tomatoes
  • 1 zucchini, sliced and grilled
  • 2 ears corn grilled, then sliced from cob
  • 1/2 butternut squash, sliced and roasted
  • 1/2 cup mixed beans
  • Baby lettuces or mixed greens
Instructions
    Make the dressing
  1. Combine all salad dressing ingredients in a food processor. Blend and refrigerate.  

  2. Make the salad
  3. Mix or arrange greens and vegetables on a plate. Serve with dressing.
